Sweet Fried Pastries

A family favourite sweet pastry treat!

2 eggs
2 cups plain flour
1 tablespoon sugar
grated zest of ½ lemon or orange
pinch baking powder
pinch salt

Mix all ingredients together except vanilla sugar. Roll out flat. Thin out dough into strips and cut into small rectangles. Fry in plenty vegetable/peanut oil or ghee/coconut oil (for a healthier option). Remove from pan once puffed up and golden brown. Sprinkle with vanilla sugar.

Nonna’s tip Keep your eye on the frypan at all times as they can burn very quickly
