Spaghetti with zucchini

Fantastic easy-to-prepare dinner


1 brown onion, chopped finely
2 cloves garlic, crushed
2 zucchini, cut into thin strips or shredded
500g spaghetti
1 cup parmesan cheese, freshly grated

Cook onion and garlic in medium saucepan with olive oil. Sauté until golden brown.
In the meantime bring a large pot of water with about a teaspoon of salt to the boil. Add spaghetti and cook for about 8 mins or until ‘al dente’. Mix zucchini strips with the onion and garlic to soften. Add a pinch of salt and pepper. Strain the spaghetti. Return the spaghetti to the pot, splash with oil and mix in the zucchini mixture. Scoop into serving plates and sprinkle with generous amounts of parmesan cheese. Serves 4-6.

My tip: Tasty even without the zucchini!
